Our roastery is situated in Viroqua's old train depot, a formerly vacant historic building that we restored. During restoration, we examined every decision through the lens of sustainability, including hiring local craftsmen who used local materials whenever possible. To list just a few examples:
- We reclaimed the studs removed during rehab, donated coal left on the premises to a local blacksmith, and salvaged much of the original trim and wainscoting.
- We hired a local cabinet maker to build cabinets and formaldehyde-free plywood bins for our green coffees.
- We installed a 90-percent-efficient boiler with in-floor hydronic heating, insulated with insulation made from recycled blue jeans and used no-VOC paints, primers and finishes throughout the building.
- Since we are in a rural area, we have no need for an afterburner, vastly reducing the carbon footprint of our operations.
- Our vintage roaster runs on handmade belts supplied by local Amish craftsmen.
- We even sweep up every ounce of chaff that falls from our roaster to bring home to our compost pile.
